“We are grateful to Nick for coordinating our day in Chablis. After staying in Beaune, he provided detailed insights on how to maximize our tour. He met us at the train station early in the morning, showcasing his extensive experience in the industry. Nick mapped out an excellent route, allowing us to sample wines from various areas in Chablis. We enjoyed a wide variety of chardonnays, including oaked, unoaked, organic, and no-sulfate options, alongside surprising finds like Sauvignon blanc and non-pinot noir reds. By the end of our tour, we had gained a solid understanding of the Chablis wine production. In Canada, we can only purchase one “generic” type of Chablis, but tasting the chardonnays from Burgundy and Pouilly Fuisse, we found ourselves preferring those from Chablis.
