We are grateful to Nick for coordinating our day in Chablis. After staying in Beaune, he provided detailed insights on how to maximize our tour. He met us at the train station early in the morning, showcasing his extensive experience in the industry. Nick mapped out an excellent route, allowing us to sample wines from various areas in Chablis. We enjoyed a wide variety of chardonnays, including oaked, unoaked, organic, and no-sulfate options, alongside surprising finds like Sauvignon blanc and non-pinot noir reds. By the end of our tour, we had gained a solid understanding of the Chablis wine production. In Canada, we can only purchase one “generic” type of Chablis, but tasting the chardonnays from Burgundy and Pouilly Fuisse, we found ourselves preferring those from Chablis. We discovered that unoaked or lightly oaked white wines suit our taste best and brought a few bottles home with us. Thank you, Nick!
We arranged another two-day tour with Nick Borland, this time exploring Burgundy after our fantastic experience in Sancerre/Puilly Fumé a few years back. Nick collected us from our hotel and took us to wineries thoughtfully chosen based on our preferences and knowledge of Burgundian wines, including village selections and Grand Crus, both red and white. Our first day was spent in Chablis, where we enjoyed lunch at Les Trois Bourgeons, which offered excellent French cuisine with a Japanese twist. On the second day, we explored the Cote de Beaune area. Nick's expertise extends beyond just wines; he has in-depth knowledge of the history and geography of the regions and their producers. He drove us through the stunning countryside in a very comfortable van. His longtime relationships with the winemakers really enhanced our experience, leading to a warm welcome at each winery and access to high-quality wines for tasting. He also assists with shipping wine back to the US. I highly recommend this tour and hope for more wine adventures with him in the future.
I strongly recommend this tour. Nick expertly chose the top wineries for tastings and educating us about French wines. Each winemaker provided insights into their winery's history and their wine-making techniques. We began in the charming town of Auxerre and traveled to the beautiful Tonnerre, enjoying a fantastic lunch en route. The wine was excellent and easy to buy during the tour. It's also a very manageable trip from Paris by train.
We had a wonderful evening with excellent snails and perfectly served sweetbreads. The wine selection was impressive, and the cheese platter was delightful.
