What's the itinerary?+
• The journey begins with a drive south from Salamanca through agricultural and pasture lands towards the Sierra de Salamanca hills. Don Federico will share insights into the region's viticulture history and we will stop to view a historic bullring in a village. Upon reaching one of the most picturesque villages, a local ecological winery's wine-maker will guide us to an ancient vineyard with steep terraces, where we will learn about the vine lifecycle, which can be up to a century old, along with the ecological viticulture techniques used. Following this, we will tour a charming winery to understand the winemaking process from the unique indigenous grape varietals, from harvest to maturation. This will be followed by a tasting of fine wines crafted from the ancient local grapes of this distinctive terroir. • Our lunch stop will be at one of Spain's officially recognized 'most beautiful villages,' situated within the Las Batuecas natural park, known for its preserved architecture from the 12th to 17th centuries, narrow cobblestone streets, a quaint Plaza Mayor, and ancient vines adorning the buildings. A fulfilling 3-course meal accompanied by wine will be served at a local restaurant, featuring delicious woodfire-grilled meats, fish, and other regional specialties. After lunch, our visit will continue to the winery of an innovative winemaker for a tour and a comprehensive wine-tasting session.
