• We will begin by observing the fishing and sports port of Santoña from a viewpoint, discussing the Santoña Marsh as a natural reserve and sharing information about fishing in the area. • We will then visit the dock to learn about fishing techniques, different components of fishing boats, and the boat registration process. Following this, we will enter the fish market to see the auction room where the day's catch is sold. • At the Anchovy Art Gallery, we will explore the anchovy capture process, view audiovisual exhibits on its processing, and examine historical machinery, complemented by the guide's insights. Finally, we will participate in a tasting of anchovy fillets.
